  1. Prepare the Batter (Day Before):
  2. Soak rice, urad dal, chana dal, and fenugreek seeds separately for 4-6 hours.
  3. Grind urad dal with fenugreek seeds to a smooth, fluffy paste using minimal water.
  4. Grind rice and chana dal to a slightly coarse paste.
  5. Make the Unique Filling:

  6. Heat coconut oil in a large pan over medium heat.
  7. Add mustard seeds, cumin seeds, curry leaves, and dried red chilies. Let them splutter.
  8. Add sliced mushrooms and sauté until golden brown and moisture evaporates (about 5-7 minutes).
  9. Add chopped onions and cook until translucent.
  10. Stir in ginger-garlic paste and green chilies, cook for 2 minutes.
  11. Add turmeric, coriander powder, garam masala, and smoked paprika. Mix well.
  12. Add cubed potatoes and cooked quinoa, gently mix to combine.
  13. Prepare the Chutney:

  14. Blend all chutney ingredients with minimal water to form a smooth paste.
  15. Adjust consistency and seasoning as needed.
  16. Make the Dosas:

  17. Heat a non-stick pan or cast-iron skillet over medium heat.
  18. Pour a ladle of batter in the center and spread it thin in a circular motion.
  19. Drizzle oil around the edges and cook until the bottom turns golden brown.
  20. Place 2-3 tablespoons of the quinoa-mushroom filling on one half of the dosa.
  21. Fold the dosa over the filling and serve immediately.
