- Grind rice and chana dal to a slightly coarse paste.
- Heat coconut oil in a large pan over medium heat.
- Add mustard seeds, cumin seeds, curry leaves, and dried red chilies. Let them splutter.
- Add sliced mushrooms and sauté until golden brown and moisture evaporates (about 5-7 minutes).
- Add chopped onions and cook until translucent.
- Stir in ginger-garlic paste and green chilies, cook for 2 minutes.
- Add turmeric, coriander powder, garam masala, and smoked paprika. Mix well.
- Add cubed potatoes and cooked quinoa, gently mix to combine.
- Blend all chutney ingredients with minimal water to form a smooth paste.
- Adjust consistency and seasoning as needed.
- Heat a non-stick pan or cast-iron skillet over medium heat.
